Sencha is Japan's everyday green tea and the standard for the country's steamed style. The fresh leaves are steam-fixed instead of pan-fired and rolled into long, aromatic strands.

Levels of steaming within sencha change flavour and texture slightly: asamushi is clearer and herbaceous when steamed; Fukamushi - fine from extra leaf breakage & steeps faster - plusher body, deeper colour and low bitterness brewed cool.

The cup result is clean and savoury-sweet - spinach and nori over soft citrus with a subtle umami finish. Good sencha should be precise and not grassy; Cool, shorten for a silky soft infusion or slightly longer for more body.

And it works all day long: a clear, food friendly morning brew or a focused afternoon pick me up - or a refreshing mizudashi that is almost unastringent. Those looking for a green tea that feels fresh, neat and uniquely Japanese will appreciate sencha's nuance without fuss.

60-90 sec, then taste

Re-steep: 2-3 times; Add another 15-30 sec each round.

Gongfu style (gaiwan/kyusu)

6 - 8 g per 100-120 ml.

70-75 degC water

First infusion 8-12 sec; extend gently for 5-7 rounds (cutter still for fukamiushi).

Cold brew/iced brew (mizudashi).

5-8 g/L cold filtered water.

Cool 4-6 hours; strain; freeze. Naturally sweet & low in bitterness!

Is it caffeinated?
Yes. Sencha has moderate caffeine -- less than black tea but more than most herbal infusions.

Are there added flavours or sugars?
No. It contains only tea leaves without flavours or sweeteners - pure sencha. Check the ingredients for blends.

Does it get reheated?
Yes - if pre-brewed gently reheat; avoid boiling. Or enjoy cold. Refrigerate immediately and consume within 24 hours.

How do I store it/how long does it keep?
Keep cool, dry and away from light. Sencha is good for 4 years when stored properly but best enjoyed sooner for maximum freshness and flavour.

How much is shipping?

Couriers Please Shipping is $5.95 for orders under $60 and free for all orders over $60.

Australia Post is always at cost. Orders going to Po Box or Parcel Locker address may be locked in to Australia Post.

What are your transit times?

We dispatch within 24-48 hours (sometimes much faster) and from there we'll see 1-3 days transit to most metro locations within Australia excluding WA and NT which can take a week or so.

We also offer express post which will help speed up the process, at cost with no handling fees. These are always sent as priority and packed first.

Are your teas certified organic?

Up until recently we were certified organic but due to rising administration costs and the difficulty of maintaining certification we've put this on hold for now. Our suppliers and farms remain the same without any change but just now label things are organic, pesticide free or wildcrafted.

This also allows us to maintain our current pricing without any increases which we feel is more important at this time.
