Wattleseed (Acacia coriacea), sometimes also known as Acacia or Desert Oak, actually contains rather high levels of protein. This is also a low glycaemic food that releases sugar slowly over time and can therefore be useful to diabetics.

Also contains high concentrations of potassium, calcium, iron and zinc. Some would describe its taste as being a savoury, nutty, wheat-biscuit type flavour.

Taste: Smooth and savory with a mild bitterness - roasted hazelnut, malt, and chocolate depth - with subtle chocolate notes.
Mouthfeel: The palate is soft, rounded and slightly creamy.
Finish: Clean dry finish with roasted warmth and a faint spice.
Liquor colour: Very dark brown - deep amber.
Lovely with: A splash of milk or oat milk, cinnamon, vanilla, or as a coffee substitute.
