Hawthorn leaf is derived from small thorny rose trees and gives herbal blends a "green hedgerow" character.

It's understated as a straight cup: refreshing: Meadow-herbal notes, green apple skin and a clean mineral finish. Leaves are gathered when they are tender in late spring.

Some producers include some blossom tips for lift. It's caffeine-free and forgiven - longer steeps make flavour develop without becoming bitter. Cooler brew for a grassy-sweet profile or nudge the time up a minute for body.

You can sip it hot or iced with rose, linden, lemon peel or ginger for something cool, composed and food-friendly.
