Brewing

Western style (mug/pot)

2-3 g/1 level tsp per 250 mL.

95 degC water

3 - 4 minutes, then taste; Longer = more fruity.

Re-steep: 1-2 times; Add 45-60 sec per round.

Gongfu style (gaiwan/teapot)

5-6 g/100 -120 ml.

95 degC water

The first infusion should be 10-15 sec; After 10-15 sec add 3-5 infusions with fruit intensity softening over rounds.

Iced / cold brew

5-8 g/L cold filtered water.

Refrigerate 6-8 hrs; strain. For flash-iced: Brew hot at double strength 4-5 g to 250 ml 3-4 min, pour over ice.
