Did you know Silver Needle Tea (also known as White Hair Silver Needle and Bai Hao Yin Zhen 白毫银针) is only harvested two days of the year and contains only the buds and youngest leaves of the Camellia Sinensis plant?

The most expensive and prized of all the white teas, harvesting normally occurs on a sunny morning (so that all morning dew has evaporated) around March to April which is when the buds will flush.

There are two main types of Silver Needle White Tea, which are based on their region of origin - Zhenghe and Fujian, with ours being from the latter, A grade, and known to be lighter with less oxidation.

Brewing

Tea/Water ratio: 2-3 g for 250 ml.

Water: 75-85degC (not boiling).

Soak 2-3 minutes; taste and adjust.

Re-infuse: 2-4 times, 15-30 seconds each round.

Use new low-mineral water; warm cup/pot; avoid squeezing leaves to keep liquor sweet.

Cautionary Notes

Caffeine: lower than most green/black teas but present; limit if sensitive, pregnant or breastfeeding (general advice during pregnancy is to keep total daily caffeine under 200 mg).

Tannins inhibit non-haem iron uptake - avoid drinking with iron-rich meals or supplements; leave 1-2 hours between meals or supplements.

Reflux / sensitive stomach - very strong / empty-stomach brews can worsen heartburn; brew lighter & drink with food.

Kidney stones: tea has oxalates - limit if you have calcium oxalate stones in your history and drink plenty of water.

Medication timing: tea decreases absorption of some medicines - levothyroxin, iron or mineral supplements - eg. Take medicines with water and separate by at least 2 hours.

Allergic reactions/sensitivities: rare; stop if adverse symptoms occur.

Aroma: It is delicate and floral with notes of honey, melon and fresh hay.

Taste: sweet and light - honeysuckle, cucumber, and soft stone fruits in a silky cup. Its purity lets a natural sweetness linger.

Mouthfeel: Velvety and clean with an airy, refreshing quality.

Finish: Sweet and lightly floral with no bitterness.

Liquor Colour: Pale champagne-gold.

Lovely With: It is best enjoyed alone to appreciate its nuance, or with light fruits or mild desserts.

So what is Silver Needle Tea?
White Silver Needle tea or Baihao Yinzhen is made from the young, downy buds of the Camellia sinensis plant. It is a delicate fruit picked early spring with high antioxidant content and clear clarity.

Is it caffeinated?
YES, but only mildly. This white tea has less caffeine than most green or black teas.

Are there added flavours or sugars?
No. Silver Needle is unadulterated with Camellia sinensis buds without sweeteners or additives.

Does it get reheated?
YES - reheat gently if pre-brewed - avoid boiling. You may also enjoy it cold; refrigerate promptly and consume it within 24 hours.

How do I store it, and how long does it keep?
Lie flat, cool, dry, and away from light. Best enjoyed within 18-24 months for best freshness & aroma.

How much is shipping?

Couriers Please Shipping is $5.95 for orders under $60 and free for all orders over $60.

Australia Post is always at cost. Orders going to Po Box or Parcel Locker address may be locked in to Australia Post.

What are your transit times?

We dispatch within 24-48 hours (sometimes much faster) and from there we'll see 1-3 days transit to most metro locations within Australia excluding WA and NT which can take a week or so.

We also offer express post which will help speed up the process, at cost with no handling fees. These are always sent as priority and packed first.

Are your teas certified organic?

Up until recently we were certified organic but due to rising administration costs and the difficulty of maintaining certification we've put this on hold for now. Our suppliers and farms remain the same without any change but just now label things are organic, pesticide free or wildcrafted.

This also allows us to maintain our current pricing without any increases which we feel is more important at this time.
